Why zoodles?

In honor of this little guy (and a bunch of other green zucchini gems I picked up at the store), we’re making ZOODLES! Zoodles are a healthy alternative to pasta that you can pick up already spiralized at the grocery store or you can easily make them at home with your own spiralizer.
With this homemade cherry tomato sauce, fresh basil, prosciutto, and two kinds of cheeses (obviously) added to the zucchini, I promise you, you won’t even miss the pasta.
What is a “burst” cherry tomato sauce and how do you make it?
To make a burst cherry tomato sauce, you cook the cherry tomatoes to the point where they have softened up and have a little give. Then, you pierce the tomatoes with a knife, so that the seeds and juices run out creating a delicious sauce. As the sauce continues to cook, you can mash the tomatoes with a fork or kitchen tongs to release more of the juices.
