Cheese and Chive Scrambled Eggs

Ingredients

  • 2 tbsp salted butter
  • 6 eggs
  • 1/3 cup aged cheese cubed (I used Trader Joe's Creamy Toscano Cheese Soaked in Syrah)
  • 1 tbsp chopped chives
  • salt and pepper to taste

Instructions

1. Cube the cheese in approximately 1/4 inch pieces and finely chop the chives and set aside.

2. Over medium heat, melt the butter, being sure to coat the sides of the pan, as well.

3. Add the 6 eggs to the pan.

4. Using a spatula, gently scramble the eggs in a circular motion to combine the yolks and white for about 30 seconds.

5. Continue stirring and folding the eggs as they cook for about 2-3 minutes.

6. When the eggs are almost fully cooked, add the cheese, salt, and pepper, and stir. Cook for approximately 1 minute.

7. When the eggs are fully cooked, remove the from the heat and add the chives.
